Known for a long time for hiring black workers at a time when racial tensions were high. Not only did the Camellia Grill hire African Americans, we hired them to work front of house. This was wildly progressive in the predominantly segregated south. We still cherish our beloved waiters and love to promote from within. Some of our best, longest-running, and most beloved waiters have worked there way up the ladder from the dish room!
